Macerated with strawberries. Discover coffee from Sumatra.
Behind this exceptional coffee stands farmer Bang Silalahi and his community of farmers, who specialize in the production of single-origin nanolots in the Toba region of Sumatra. They process not only coffee from their own organically certified farm but also from other farmers in the vicinity. Bang Silalahi is regarded as an innovator and visionary who started with one hectare of land in 2004 as part of a research project focused on sustainable agricultural practices and supporting local farmers.
Processing
After careful manual harvesting and sorting of ripe cherries, the process of peeling and anaerobic maceration using fruit enzymes follows – specifically with strawberries for this lot. This special process imparts an intense strawberry aroma to the coffee, making it unique. Then, the coffee beans are washed and dried for up to 14 days to achieve a desired moisture content of 13%. Next, the parchment layer is removed, followed by further sorting by size and additional drying. Finally, the coffee is sorted, packaged, and prepared for export.
