The correct settings for espresso are an essential skill for every barista. The speed at which ground coffee dissolves in water significantly affects the flavor of the final drink. The taste of espresso depends on the amount of coffee used, the total weight of the drink, and the time needed for its preparation. With a simple ratio and a few steps, we can create a wonderfully balanced and flavorful espresso.

Coffee to water ratio: 18:36 g (1:2)
Coffee: 18 g (fine grind)
Water: 36 g
Extraction time: 25-29 seconds
Extraction temperature: Between 93-96 °C

Step 01
Prepare the scale for weighing the exact dose of ground coffee and the resulting liquid in the cup.

Press the coffee in the portafilter with an approximate pressure of 10 to 15 kg. More important than the force of tamping is keeping the coffee level.
Step 04
Thoroughly rinse the coffee machine head and then insert the portafilter and place the scale.
Step 05
Start the extraction. The resulting weight should be approximately 36 g, and the extraction time should be between 25–29 seconds. If the extraction takes less than 25 seconds, the coffee is ground too coarsely – adjust the grind to be finer. If the extraction takes more than 29 seconds, the coffee is ground too finely – set the grind to be coarser.
Step 06
For a more balanced flavor, stir the espresso to combine the individual layers before drinking. Then, simply enjoy your cup.
Notes
- For espresso, use coffee at least 2 weeks after roasting.
- Between each grinding adjustment, release a little coffee to ensure that all the coffee is at the new desired coarseness.
