The coffee comes from the Brazilian region of Minas Gerais, which is the largest area focused on coffee cultivation in all of Brazil. This region has a very friendly climate for growing.
The coffee is dried unhulled, meaning it is still in the husk in thin layers under the sun. The condition is even spreading so that air and sunlight reach all the beans equally. The coffee fruits must be turned and raked later primarily to ensure that they dry evenly. Beans processed using this method are sweeter, more complex, and have a more pronounced body.
