The history of Fazenda Guariroba dates back to the 19th century and is now carried on by the fifth generation of the Lamounier family. The farm is managed by Gabriel Lamounier Vieira and Elisa Paiva Lamounier, who combine a long-standing coffee-growing tradition with a modern approach to specialty coffee production. Gabriel, a trained chemist, operates his own laboratory on the farm, where he develops innovative fermentation techniques to enhance the natural flavour potential of each variety. Their work has earned numerous Cup of Excellence awards, including the championship title in 2016. This lot was produced as a limited 150 kg microlot, making it a truly exceptional coffee.
After harvest, carefully selected Yellow Catuaí cherries undergo a 76-hour anaerobic fermentation in sealed barrels before being dried on African raised beds for approximately 30 days. This precisely controlled process enhances the coffee's sweetness, juiciness, and complexity, resulting in notes of cocoa nibs, hibiscus, and Earl Grey tea.
