Huehuetenango - The Heart of Guatemalan Coffee
INFO
The Huehuetenango region is one of Guatemala's most renowned coffee-growing areas. Its high altitude, cool nights, limestone soils, and dry winds from the mountains of southern Mexico allow coffee cherries to ripen slowly, resulting in exceptional sweetness, a full body, and rich aroma.
Waykan Regional Select is carefully composed from lots produced by smallholder farmers across different microregions of Huehuetenango. Rather than coming from a single farm, it is a regional blend that faithfully reflects the distinctive character of this origin. Most of the coffee is grown by indigenous Mayan communities, for whom coffee production is a vital source of income.
The blend typically includes the traditional Guatemalan varieties Bourbon, Caturra, Pache, Maragogype, and Catimor. Quality and farmer support are strengthened by Guatemala's national coffee institute, Anacafé, which provides research, education, and agronomic assistance.
After harvest, ripe coffee cherries are carefully sorted and dried whole on raised African beds or concrete patios. Once the ideal moisture content is reached, the dried cherries are mechanically hulled and prepared for export.
