There, where coffee breathes tradition
High in the Uragy mountains, in the heart of the Ethiopian Guji region, lies the village of Yabitu Tume. Local smallholder farmers here cultivate coffee on small garden farms around their homes. Coffee trees grow in the shade of indigenous trees such as enset, albizia, or acacia. Thanks to the altitude of 1,900–2,300 meters above sea level, fertile clay soil, and cool climate, coffee cherries ripen slowly, contributing to their distinctive sweetness and complexity.
The harvested cherries are delivered by farmers to the Yabitu Tume washing station the same day, where they undergo careful washed processing - fermentation, soaking, and drying on raised beds. The station operates sustainably: waste from the cherries is converted into organic fertilizer and wastewater is safely treated. The result is coffee with a clean flavor profile full of fruity tones, honey sweetness, and a juicy finish - a reflection of the care and tradition of the local community.
