Matcha is an exceptional green tea powder that plays a key role in the Japanese tea ceremony and is one of the true specialties of the tea world. A crucial phase of its processing involves shading the tea plants with bamboo mats several weeks before harvest. This process increases the levels of chlorophyll, L-theanine, and contributes to the rich umami profile of the resulting tea.
After harvesting, the fresh tea leaves (known as Namacha) are briefly steamed and then naturally air-dried. After carefully removing the stems and veins, the traditional slow grinding on granite stones follows, resulting in a fine, brilliantly emerald green powder with a silky texture.
Preparing matcha is simple yet simultaneously meditative: the tea powder is placed directly into a tea bowl (chawan), hot (not boiling) water is added, and it is whisked with a bamboo whisk (chasen) into a fine froth. The result is an intense, lightly sweet flavor and a rich, creamy experience in every sip.
