Matcha is an exceptional green tea powder that plays a key role in the Japanese tea ceremony and is among the true specialties of the tea world. A key phase of its processing is the shading of the tea plants with bamboo mats several weeks before harvest. This process increases the content of chlorophyll, L-theanine, and contributes to the rich umami profile of the resulting tea.
After harvesting, fresh tea leaves (known as Namacha) are briefly steamed, then naturally air-dried. After carefully removing the stems and veins, a traditional, slow grinding on granite stones follows, resulting in a fine, vividly emerald green powder with a silky texture.
The preparation of matcha is simple yet also meditative: the tea powder is placed directly into a tea bowl (chawan), poured with hot (not boiling) water, and whisked with a bamboo whisk (chasen) into a fine froth. The result is an intense, subtly sweet flavor and a rich, creamy experience in every sip.
