Bistro Paulus is a new gastronomic concept by chef Roman Paulus, bringing a fusion of classic Czech cuisine with inspirations from around the world to Olomouc. Roman, a Michelin-star holder, has gathered experience during his career in Austria, Italy, France, Asia, and on transoceanic ships, and he decided to create a bistro that combines simplicity with perfection.
During the day, we offer a modern version of a canteen for the 21st century – fast, yet quality meals that you can enjoy in a relaxed and unique environment. On the board, you will find the current offerings, always prepared from fresh and carefully selected ingredients.
Evenings and weekends at our place belong to unique experiences. Bistro Paulus opens its doors for corporate events, private parties, or family celebrations. The team, led by Roman Paulus and chef Petr Stoklásek, regularly prepares tasting dinners, cooking schools, and special events where art, gastronomy, and unforgettable experiences intertwine.
