Pai Mu Tan, known by the poetic name "White Peony," is one of the most valuable white teas in China. Its home is the Fujian province, specifically the areas of Fuding and Zhenghe, where the tradition of growing white tea has been passed down for centuries. The harvest takes place exclusively in spring, when the delicate bud and the two youngest leaves are hand-picked. The dry leaves of Pai Mu Tan appear elegant – large, green-brown flakes combined with silvery-haired buds create a colorful mosaic.
